In the battle between Waffles and Pancakes, I'm firmly Team Waffle. I'd rather have a bunch of tiny buckets for my butter and syrup rather than having it all disappear into a sponge, and the mouthfeel and chew of a waffle is just so much more satisfying. I honestly didn't think they could get any better until I discovered yeasted waffles. The flavor is so much more complex, it's like a whole different meal to me now. Yeasted waffles have driven me much further into the depths of my waffle snobbery, and I'm intent on spreading the news of their superiority.
Toppings
- Traditional: Sometimes you just need the comfort of some butter and syrup. To mix things up, try a spiced syrup.
- Go Bananas: Cut up some banana slices, dip the cut sides in sugar, and cook in a pan to make super-fast caramelized bananas as a topping. You can also just mix cut banana pieces into the batter as the last ingredient.
Storage
Just wrap these in plastic wrap or put them in a Ziplock bag, and store in the fridge. You can also wrap these in plastic wrap to freeze and then re-heat later, although they may lose some of their moisture.

"Oh Boy" Yeasted Waffles
Ingredients
- 2 cups flour
- 1 ½ t instant yeast, or one packet
- ¼ t cardamom
- ½ t salt
- 1 ½ cups milk, lukewarm
- 2 eggs
- 6 T unsalted butter, melted
- 1 t vanilla
Instructions
- Whisk the dry ingredients together in a large bowl, and then add in the wet ingredients. Mix until well-combined. The batter will expand, so ensure it has some space to grow.
- Cover and set aside for at least 30 minutes. The more time you give it to rest, the bolder the flavor will be. You can also cover it and put it in the fridge overnight to cook the next morning.
- Pour the batter into your waffle iron as normal, and serve immediately.
