The food concept you never knew you needed: sliceable mac and cheese. Yes, you can pick up a slice of it and eat it if you were so inclined. I never dreamed you could turn the idea of meatloaf into a pasta dish, but here we are.
The original recipe from Grandma Grace's cookbook was sound in theory, but incredibly bland. So we took traditional flavors from Chicken cordon bleu, and made it into a noodle loaf.
Notes
- Noodle Shape: You can, in theory, use any short noodle shape you like for this. But keep in mind that larger noodles, like rotini, will take up more volume. So you may not need the entire 12oz depending on what type of pasta you choose. We used medium shells to test this recipe.
- Shredded Cheese: Most pre-shredded cheese has anti-caking agents incorporated, and often has some of the moisture removed as well to lengthen its shelf life. This means it will melt slightly differently. If you'd like to get away from processed cheese, I recommend buying block cheese and just shredded it yourself with a grater.
- Use Your Holiday Leftovers: Have ham leftover from Thanksgiving or Easter? Sounds like Macaroni Loaf is getting added to the week's meal plan.
Storage
Cover with plastic wrap or tin foil, and store in the fridge for 3-4 days.

Use the unwanted heels of your bread to make your own breadcrumbs. Just lay slices on a baking sheet and bake in the oven on the low or "warm" setting for 1-2 hours. Then run them through the food processor to grind them finely.

Macaroni Loaf Cordon Bleu
Ingredients
- 12 oz small pasta, any shape
- 1 cup regular breadcrumbs
- 1 cup shredded mozzarella cheese
- 1 cup shredded gouda or swiss cheese
- 6 oz diced ham, or about 1 cup
- ¼ onion, minced, or ½t onion powder
- 1 clove garlic, minced or grated, or ½t garlic powder
- ½ t salt
- 1 T parsley
- ½T dijon mustard
- 1 cup milk
- 2 eggs, beaten
Instructions
- Preheat the oven to 350℉. Cook the pasta in boiling, salted water, according to the directions for the shape you chose. Once they're cooked, drain the pasta. Add the remaining ingredients to the pasta and mix to combine.
- Grease a 9x5 loaf pan, and then transfer the pasta mixture to the loaf pan. Bake for 40 minutes.
